Mushroom on Toast

One of the simplest yet best ways to enjoy your mushrooms!

INGREDIENTS:

• 200g Oyster mushrooms

• A couple slices of good bread

• Butter and/or Olive oil

• Salt & pepper

HOW TO COOK?

STEP 1: Slice your mushrooms to whatever size you want or just pull them apart into hunks in your hands.

STEP 2: Heat a frying pan up to get it hot, drop a good knob of butter in and a tablespoon of olive oil and add the mushrooms.

STEP 3: Season with a grind of salt and pepper and stir frequently for 5 – 10 minutes.

STEP 4: Get your bread toasted and buttered and when the mushrooms are golden around the edges, slide them out of the pan and onto the toast on your plate. For a nice variation on this, you could add a little cream and fresh parsley towards the end, or try cooking them in sesame oil instead of butter.

 

MUSHROOM EGG BHURJI

INGREDIENTS:

Mushroom - 1 cup

Egg -2

Onion -1, chopped

Capsicum - ½ cup, chopped

Red chili powder - 1 tsp

Coriander Powder - ½ tsp

Turmeric powder - ½ tsp

Garam Masala Powder - ½ tsp

Jeera powder -½ tsp

Salt - to taste

Pepper powder - ½ tsp

Oil-2 tbsp 

HOW TO COOK?

STEP 1: Take a chopper and add cleaned mushroom and chop it well. Keep it aside.

STEP 2: Take a pan and add oil. Add finely chopped onion and saute it well until they cooked well. Add ginger garlic paste and sauté it well for few minutes until raw smell leaves.

STEP 3: Add chopped capsicum and sauté it well. Add red chili powder, coriander powder, cumin powder, garam masala powder, turmeric powder. Add salt to taste and saute for few

more minutes.

STEP 4: Add chopped button mushroom and saute it well until masala blend with mushroom. Cover the lid and cook for 2 minutes.

STEP 5: Once the mushrooms are cooked completely, add egg and mix it well. Scramble theeggs well and add salt to taste.

STEP 6: Add pepper powder and mix it well. Garnish with coriander leaves. Serve with Roti or steamed Rice.

 

VEG OYSTER MUSHROOM MASALA

INGREDIENTS:

•200g Mushrooms- Cut into Chunks

•1 teaspoon Cumin Seeds

•Medium Tomatoes-finely chopped

•Turmeric powder- 1/4 tsp

•Red Chili powder-1/2 tp

•Juice of half a lemon

•Oil-1 1/2 tsp

•Medium Onions-finely chopped

•Ginger Garlic Paste-1 tsp

•Black pepper powder-1/2 tsp

•Garam Masala powder-1/2 tsp (opt)

•Salt as per taste

HOW TO COOK?

STEP 1: In a kadai, heat oil, add whole cumin seeds. After spluttering of cumin seeds, add onions.

STEP 2: Saute onions till slightly brownish. Then add the chopped tomatoes and ginger-garlic paste. Add all dry spices except garam masala powder. Add salt and mix well.

STEP 3: Let it cook till tomatoes are fully soft and paste starts leaving oil. Then add fried brown onions & oyster mushrooms.

STEP 4: Gently mix the mushrooms to avoid breaking them. Cover lid and let in cook for 6-8 minutes for low flame.

STEP 5: Open lid & cook for 1-2 more minutes on medium heat to let extra moisture,evaporate.

STEP 6: Add garam masala & lemon juice. Garnish with coriander leaves.

STEP 7: Tip: You can also add peas n capsicum along with mushrooms
